Potato and Parsnip Soup with Dill

Because I only made this Potato and Parsnip Soup…
…so that I could get some use out of this!
My immersion blender! I bought one probably four months ago, because I just knew I would use it all the time. And then I didn’t open the box until last week.
But now that I know how awesome it is, I’ll definitely be putting it to use more often!
This recipe calls for half of the soup to be pureed and the other half to remain chunky, which gives it an awesome texture. Generally I would have to pour half of it into my regular blender, which is a major pain to clean. But with the immersion blender, I could puree it directly in the pot! Yay!
The subtle woodsy flavor of the parsnips makes this soup a little more interesting than your standard potato soup. And don’t omit the dill on top; it really brightens it up, both visually and taste-wise!
Potato and Parsnip Soup with Dill
Adapted from Real Simple
Serves 4
Ingredients
1 tbsp olive oil
2 medium parsnips, peeled and cut into 1/4 inch pieces
2 leeks (white and light green parts), cut into half-moons
1.25 lbs Yukon gold potatoes, peeled and cut into 1/2 inch pieces
1/2 cup dry white wine
3.5 cups vegetable or chicken broth
salt and pepper
sprinkling of fresh dill
1. Heat the olive oil in a large soup pot over medium heat. Add the leeks, parsnips, 3/4 tsp. salt, and 1/4 tsp. pepper
2. Cook, stirring occasionally, until the vegetables begin to soften, 6-8 minutes.
3. Add the wine and simmer for a few minutes.
4. Add the potatoes and the broth; bring to a boil. Reduce heat and simmer until the potatoes are tender, 12-15 minutes.
5. Divide the mixture in two and puree half of it until smooth (in either a regular blender or with an immersion blender). Combine the two mixtures again in the pot and stir.
6. Add the soup to your serving bowls and sprinkle individually with dill to taste.

I have never made anything just so I could use an appliance I already own but I have bought an appliance just so I could make “one thing”.
Like my food processor. I bought it just so I could make my own nut butters. Which of course, is only one of the many, many items I have made with it.
My favorite soup is Ellie Krieger’s Nutty Sweet Potato Soup and I absolutely love my immersion blender. I blend all of my soups with it.

I love recipes that call for my food processor, and one of my favorite parts of making French macarons is using my food processor AND heavy-duty stand mixer for one recipe. This soup looks great! I love an old fashioned vegetable noodle soup the best.

I need an immersion blender. I’m afraid that I would never use it. I have never made homemade soup before, but it’s mainly because I don’t like the idea of transferring everything to a blender to puree it. Your soup looks awesome.
Yeah, transfering it to a blender is a major pain in the butt. The immersion blender is so much easier!
I LOVE my Braun immersion mixer. Unfortunately, I couldn’t take any kitchen stuff with me when I moved to Brazil, so I’ve been without it for a few months now. I’m feeling it’s lack, to be sure. I’ve had a few mishaps with the blender
I’ll be visiting Canada in March, so I may just have to save some room in my suitcase and bring the mixer back with me. Your soup looks delish, btw.
PS. I’d buy an immersion mixer here, but appliances in Brazil are CRAZY EXPENSIVE! It’s a real bummer…
Ha, I only use my immerson mixer when my grown up mixer fails. I should try and use it more often..the soup looks amazingly good and much better than the lunch I packed and just pulled out of my office’s mini-fridge.
I’m actually not a fan of soup but I do enjoy black bean soup! I have made things just to use a kitchen gadget…just got a salad spinner and went crazy buying different lettuces hahah
I bought my immersion blender about a year ago and I think I used it once… or maybe even never. I think it’s a really good gadget to have around if you make soups. Clearly I don’t.. but I should. I love how it kind of creams it without cream!

I’ve always wanted an immersion blender and have never justified buying one. I bet its easier to use the immersion blender than pouring hot soup into a regular blender and blending it.

I want to put my kitchenaid immersion blender next to my pillow at night like a teddy bear. I lo-ve it. If anyone’s thinking about getting one, I highly recommend it!
I have made a bunch of soups, vinaigrettes, and smoothies. The thing crushes ice like a champ!

I don’t think I’ve ever used my immersion blender for anything other than soup, but even so, it’s still worth it. So easy and much less stuff to wash afterward. Always a plus.
I love my immersion hand blender. I use it for soups often. My mom uses it for smoothies. I always forget you can use it for smoothies too!
