Apricot Graham Snackers
Many people limit their graham cracker intake to situations involving camp fires, chocolate bars, and marshmallows. But those people are missing out; the world of graham cracker possibilities goes so much deeper than your traditional s’more.
Take these Apricot Graham Snackers for instance. They’re a satisfying mid-day treat, no logs or newspaper required. And while I thoroughly enjoyed these as an adult, I also think they’d be perfect as an after-school snack for the youngsters in your life.
I got this idea from the monthly Whole Foods flier, which I scour regularly in search of a Larabar coupon. But this recipe caught my eye even before I found my 50 cents off any two Larabar varieties, primarily because of the dried apricots. I will try almost any recipe involving those lovely little orange shrivels I love so much.
All chopped up.
I tossed my dried apricots into the food processor, along with some plain Greek yogurt…
and a touch of cream cheese…
and a little bit of honey for sweetness. The spread was still pretty tangy, which I liked, but Dave wished it had been a tad sweeter. So if you’re not a huge fan of the “bite” of plain Greek yogurt, consider upping the honey to taste.
Whirled it all up until it was spreadable but still chunky, then smothered it on some graham crackers. A lovely little snack!
Apricot Graham Snackers
from Whole Foods
Ingredients
1 (6 oz) container of plain Greek yogurt
3 tbsp cream cheese
1/2 cup chopped dried apricots
1 tbsp honey
graham crackers (I used honey, but the cinnamon variety would also work)
1. Puree yogurt, cream cheese, apricots, and honey in a food processor until spreadable but still chunky.
2. Spread atop graham crackers and enjoy!

My mom eats graham crackers all the time. I like the cinnamon variety with a little bit of nutella. Then again, nutella on anything is good.

What a great idea! I often put cream cheese on graham crackers (and sometimes a little fruit preserves too) but never thought about making a spread with yogurt. Yum!

I absolutely love apricots and greek yogurt. I went to Zaytinya’s for my birthday and the restaurant serves greek yogurt with apricots and honey as the birthday freebie dessert. It was so yummy and creamy…
I like to spread coolwhip on graham crackers and freeze them for a fun little “ice cream” sandwhich.

Graham crackers were made for smores — or the jarred frosting from Pillsbury. Not the most healthy snack but it tastes so good.

We go through so many graham crackers at my boyfriend’s house. But it’s all because his sister eats at least 1 smore a day! (she makes them in the microwave)

my favorite afterschool snack was cream of wheat or oatmeal with tons of milk and butter and sugar and cinnamon.
I love dried apricots, too! Could eat them all day long. Billy won’t touch them.
I remember eating strawberry Poptarts after school in 5th grade. And I’ve always been a bowl of cold cereal snacker. I love graham crackers in the form of PIE CRUST! Mmmm.

Not that I know of. I just do a quick check of the ingredient list to make sure there’s nothing funny in there!

But your way of eating them is even better!
I like topping them with a smear of pumpkin, apple or almond butters or a dab of nutella. But my fav is to smash them up, throw them in skim milk and to eat them when they’re nice and soft.
That sounds absolutely amazing to me! I much prefer graham crackers soft, which the Hubs says is weird. I say he’s weird.

I shouldn’t even mention this because they are so good but so bad, but spreadable cake frosting on a graham cracker is about the best thing ever.
