Tuna Stuffed Tomatoes

Today is Saturday. Otherwise known in my household as Farmers’ Market Day. Otherwise known as the day I recommit myself to eating locally and in season. :-D

Right now, that means I’m all about tomatoes!

There is something wonderful about a fresh, locally-grown, perfectly ripe tomato. You simply cannot beat that flavor.

This quick, no-cook recipe stuffs the tomatoes with a simple mixture of tuna, capers, lemon juice, olive oil, and parsley. It’s a fresh but subtle flavor that stills allows the tomato to shine. Hollowing out the tomatoes is a little messy, so be sure to use a decent knife (the tomato innards don’t go to waste – they are added to the tuna mixture).

Tuna Stuffed Tomatoes
Adapted from Cheap Healthy Good, originally from Real Simple
Yields 2 tomatoes

Ingredients
2 large tomatoes
6 oz. tuna, packed in water, well-drained
2 tbsp capers
1/4 cup fresh parsley, chopped
1.5 tbsp lemon juice
1/2 tbsp extra-virgin olive oil
sea salt and black pepper, to taste

1. Slice the top off of each tomato. Discard the seeds and goopy innards (technical term right there), and chop the remaining flesh.

2. In a medium bowl, combine that remaining tomato flesh with the tuna, capers, parsley, lemon juice, olive oil, salt, and pepper.

3. Divide the mixture between the tomatoes. Serve immediately or (if you’re not a food-at-room-temperature kind of person) refrigerate for 10-15 minutes before serving.

In other tuna-related news, I was inspired by this recipe and by Lisa of Early Morning Run to try a new take on tuna salad.

Per Lisa’s suggestion, I decided to make a tuna salad with hummus instead of mayo or yogurt. Interesting idea, no? I combined: tuna, hummus (plain, and not too much), cherry tomatoes, capers, salt, pepper, and garlic powder. Verdict? Delicious!

    I absolutely love tomatoes of all kinds. I eat the cherry/grape tomatoes like candy. I’ve been enjoying peaches and watermelon :) I adore lots of fresh fruit during the dog days of summer. Plus there’s tons of fresh produce where my grandparents live in Michigan. Ah the joys of living in no where Michigan where you can purchase locally grown peaches for $0.79/lb (as opposed to Cali peaches for $2.99/lb at Whole Paycheck)!

    Just wondering if you have any tips on buying tomatoes? Somehow more often than not I end up with ones that are just too slimey. Or perhaps I’m storing them wrong. What’s your suggested “shelf life” of a tomato?

    All salads have to have tomatos in them for me…great tasting and colorful.
    My tuna salads I add spicey mustard instead of mayo..I like the zesty bite.

  8. I used to HATE tomatoes until very recently. I still don’t think I’ll be eating them on their own anytime soon, but I do enjoy them on/in things. :)

    Fresh, local tomatoes are one of my favourite things about summer. I love topping them with basil, feta, EVOO, balsamic vinegar, and s&p for a side salad.

    I went to the farmer’s market today too! I scored some yummy tomatoes, red pepper, ghost chili pepper (I haven’t tried one before but I love spicy foods), apples,and peaches.

    I make something similar to the tuna tomato but instead I hollow out a pepper. I have placed inside canned smoked salmon and white northern beans mixture. It can be eaten hot or cold.

      I’ve never heard of that ghost chili pepper before. Sounds interesting! And I love, love, love white Northern beans, so your suggestion here sounds delicious to me!

    I love cucumbers and also the yellow squash/zucchini. The cucumbers that you buy in the store just aren’t the same as the fresh ones.

    My tomatoes are in full swing right now and you are right, nothing beats a ripe juicy tomato. I love when they are freshly picked and still warm from the sun. Tuna salad in a tomato is a great idea! I always forget to do this one. ;)

  15. i definitely love tomatoes! I like them as is, or in all kinds of recipes. My favorite way to eat them is on bread with a little mayo and basil, or on a simple garden pizza. I’ve posted about both already, and that’s all I’ve been eating so I need something to blog about! I guess that’s the only problem with eating seasonally!

    Our jalapenos are almost ready, and I’m really excited about those too. And beets. We have lots of beets!

    I am slowly coming around to tomatoes. I really like the little sweet ones (sweet 100′s?) I am growing this year. My husband doesn’t like them at all so we typically don’t eat many at our house.

    I love tomatoes–unfortunately the tomatoes where I live are really bad. (I think the hot house ones come from bali, and have no taste to them.) Next year I plan to buy some tomatoes plants and try my luck at grown tomatoes.

    I did see some heritage tomatoes at the health food store last week. I’m planning on buying some and then making a salad similar to this for dinner while the weather is nice.

  25. thanks for the recipe! i eat tuna 4 lunches a week and it’s always the same thing (tuna with raw spinach. that’s it.) so i’m definitely inspired by this. and yeah, i love tomatoes. hated them when i was a kid, but literally taught myself to like them. i thought they were “adult food” and wanted to be an adult. (lol!)

    THAT looks delicious, I hate tomatoes though. Or, my stomach hates them! I can do pizza sauce and spaghetti sauce but RAW tomatoes, no way! I do wish I could eat them though, they are soo amazingly tasty looking. I was actually thinking of making a tuna salad very similar to this one today, what a coincidence!
