I have a hard time eating savory first thing in the morning. Either I have something like that for my 'second breakfast,' or I might have it for lunch or dinner. My trainer makes a chile relleno casserole that is mucho bueno!

YUM! This reminds me of a breakfast casserole my dad used to make, which had hash browns as the bottom layer! I'm going to have to get him to make that again sometime soon...

I definitely find that savory breakfast keep me fuller longer (like you said - more protein). But I just can't seem to shake my love for sweet breakfasts these days!

Katie... this is amazing! I never make breakfast ahead of time but this would be great for me to make and grab as I need it. This would also be really good for a fast lunch. My breakfasts are usually just Food for Life english muffins with P. butter or cold cereal. Boooring.

I also usually go for a sweet breakfast because there aren't too many vegan options in the savory vein, but I do love a good tofu scramble!

I make crust-less quiches each weekend for my breakfasts during the week all the time. I play with different ingredients but I prefer an egg breakfast because it keeps my blood sugar stable all morning and helps me feel full.

That breakfast casserole looks awesome! I love asparagus and mushrooms! I sometimes do something similar with quiche and have it ready for the whole week! I love making muffins for the week as well!

Mmmmmm yum! I love breakfast casseroles. I like to add potatoes or whole wheat bread to mine to bulk them up a bit. Definitely something I make in advance and in large batches are pancakes that way I can enjoy them throughout the week too.
