What I Ate – 2/10/2010
Happy Wednesday, everyone! I hope you all had as fun of a day as I did!
By the way, I am LOVING your comments on my post about fat talking with friends – you all are so insightful!
Let’s start at the beginning…
Breakfast
I knew I was going to have a good day because it started out with this beauty:
A Chocolate Cherry Breakfast Cookie.
If by chance you are not yet familiar with the breakfast cookie, definitely check out Gina’s awesome tutorial – she is the breakfast cookie inventor and expert!
For this one, last night I combined:
- 1/3 cup oats
- 1/2 mashed banana
- 1 tbsp creamy almond butter
- cinnamon
- 1/2 tbsp dark chocolate chips
- 1 tbsp unsweetened dried cherries
Mixed it all together, then spread it out on a plate and put it in the fridge overnight.
Then this morning I added some “icing” – a layer of plain Greek yogurt.
I loved the chocolate-cherry combo. And how about those HUGE dried cherries?!?! I’m thinking this would also be good with unsweetened cocoa powder subbed in for the cinnamon.
Very satisfying!
Lunch
After breakfast I went to the Y for a light workout. I wanted to move a little bit, but also let my body rest because I ended up running 6.8 miles yesterday!
I felt amazing the entire time, and afterward I kept thinking to myself, “who is this woman who is running almost 7 miles and totally loving it?!?!?!”
So to give my body a little break, I kept it light today – a little bit of elliptical and a little bit of stationary bike, both at an easy pace.
My cookie kept my hunger at bay until lunch, which was all about the microwave.
Sorry to be boring with another sweet potato/black bean combo, but it’s delicious and I need to use up the beans. Today I “baked” the potato in the microwave (just stabbed with a fork, wrapped in a paper towel, and nuked for about 3 minutes).
I also microwave-steamed some sugar snap peas – just a bit so they’d keep their crunch. Sprinkled with sea salt.
And an Arnold’s sandwich thin with some Laughing Cow.
Thank you, microwave, for enabling me to cook healthy food quickly!
Afternoon Snacks
This afternoon I headed to my hometown (York, PA) for some shopping with my momma and a fun ladies’ dinner! I made a simple to-go green monster smoothie to sip on the drive up.
The smoothie contained:
- 2 packed cups of spinach
- 1 cup almond milk
- 1 frozen banana
One of our stops was Ulta for some fun Philosophy products. Have you seen these all-in-one body washes/shampoos/bubble baths? They come in such great scents! For Christmas I got the “Vanilla Birthday Cake,” which was divine! So excited to try these:
They smell exactly like their names suggest, but I promise you don’t end up smelling like dessert all day! (Although would that be so bad?
)
Mid-shopping I munched on a Kind bar. I really enjoyed the sweet yogurt coating on this one, extra sugar be darned!
Dinner
Dinner was a treat! Tonight was what is known as the “Father and Son Banquet” at the church I grew up in and which most of my family still attends. (There’s a Mother and Daughter Banquet as well.) Our family tradition is to go out for a ladies’ dinner while the guys are at their banquet.
So my mom and I met my aunt and cousin at a cute little regional deli called Isaacs that I used to go to all the time when I was in high school. I ordered the Larkspur, which was cheddar and Muenster cheese, tomatoes, spinach, and sprouts grilled in a flatbread. I ordered it with Dijon mustard instead of ranch dressing.
The grilled flatbread was quite good, and almost any sandwich gets bonus points in my book for sprouts.
Evening Snack
When I got home from York I immediately made myself a little dessert.
Fresh chopped pear topped with a drizzle of melted dark chocolate and a sprinkle of sliced almonds.
I think pears, dark chocolate, and almonds were simply meant to be eaten together.
Now it’s time for a little blog-reading, then hitting the hay!
I just realized while writing this that I went totally vegetarian today. To non-vegetarians/vegans, do you ever go a day (or even several) meat-free without even realizing it?
AND
Would you use a body wash or shampoo that smelled exactly like your favorite dessert?

What a great day! It’s so nice to spend time with your mom! And do not apologize for more sweet potato/black bean combos! I love it and would gladly eat that meal all the time!!

i love your eats! and i actually went veggie by accident. i just realized that i subconsciously made meat-free choices for weeks on end, and ended up veggie! oops!

I go accidentally vegetarian on alternate days usually. I don’t think I have ever gone accidentally vegan though.
I definitely need to try a breakfast cookie sometime soon!

Your oatmeal cookie looks especially good in my pre-breakfast state. I make a dark chocolate cookie with dried cherries in it, but I think your cookie is much healthier
There are definitely times I go without meat…probably only a day or two but it does happen. I enjoy having the option of meat in my diet, but it is not my favorite part of what I eat. I enjoy produce so much more!

I love the Larkspur! I didn’t realize I could get it on flatbread, though. Hmm… might need to be a trip to Isaac’s!
When I’m feeling myself I can go days without meat…but with DH and his carnivore ways, we generally end up with meat for dinner.
Dinner is absolutely the hardest vegetarian thing for me to do. Especially with him.
I need to teach myself (and my husband) that it’s perfectly okay to go all vegetarian for day. Our brains are automatically programmed to think a meal = meat. I’m beginning to learn that it doesn’t have to be that way, but my husband…not so much.
I wouldn’t use a dessert-y shampoo. I’m a strictly tropical or flowers kind of girl. Smelling like a cinnamon bun or sugar cookie is just too heavy and kitchy.
I probably technically eat a vegan diet 4 out of 7 days per week but I am not a vegan or a vegetarian even. I do strive for a plant based diet though. I do eat meat when my body is craving it, though.
What a yummy day! I often go veg too.
To answer your second question, yes! I found this pumpkin shampoo and conditioner by Healthy Sexy Hair last fall that I was in love with. Not only did my hair look and feel great, but I enjoyed a wiff of dessert when the wind blew my hair around
I think I am going to dub you the Queen of Pumpkin!
Seriously, though, I would purchase pumpkin shampoo in a heartbeat!
I love philosophy products! Although, they aren’t in my budget now…I do miss them very much:(
